Omelet Muffins (Easter Morning Breakfast)

Omlette Muffins

For Easter Morning Breakfast we made Omelette Muffins this year!
We’re excited because we can eat the leftovers as breakfast this week as a quick “grab and go”!

Omelette Muffins Recipe:
8 large eggs
1/4 cup diced bell peppers
1/4 cup diced tomatoes
1/2 cup cheese of choice (we used smoked cheddar)
Seasoning to Taste (we used Ms. Dash Table Blend)
Olive Oil Spray

Mix everything together.  Spray 12 count muffin tin. Fill muffin cups 2/3 full.  Bake at 350F for 20 minutes (or until done).  Do not overcook or they will become rubbery!

To reheat, put in the microwave for 30 seconds.  🙂
