Sweet Bean Burritos

One of the biggest struggles of the week as a working mom is finding food my three year old will actually eat.

Tonight we created a recipe that didn’t equate to tantrums at the dinner table.

Sweet Bean Burritos

1/2 small purple onion, diced

1 tbsp garlic, minced

2 tbsp olive oil

1 can diced Italian style tomatoes, drained

1 can red beans, drained

1 tbsp taco seasoning

4 wheat tortillas

1/2 cup shredded cheddar cheese

Cook the onions and garlic in olive oil until soft. Add in tomatoes, beans, and taco seasoning. Bring to a boil. Reduce heat and let simmer for 10 minutes. The mixture will thicken.

Mash the mixture with a potato masher. Then spread mixture on each tortilla. Role tortillas and place side by side in a glass baking dish. Sprinkle cheddar cheese on top. Bake at 200F for 15 minutes, or until cheese is melted and tortillas are warm.

Serve on a bed of rice. (I used cauliflower rice to keep it healthy).
