Vegetarian Breakfast Casserole
6 eggs
2 large baby Bella mushrooms, sliced
1 Roma Tomato, diced
1/2 package frozen spinach, thawed
2 strips fake Morning Star bacon
Shredded Dubliner Cheese
Garlic Powder

Preheat oven to 375F. Spray 8×8 casserole dish with Pam. Place layer of spinach across bottom. Please sliced mushrooms over spinach. Sprinkle diced tomatoes over mushrooms & spinach. Cut bacon strips into bite-sized pieces and spread over casserole.

In a separate bowl, beat 6 eggs. Mix in a dash of pepper and a dash of garlic powder. Pour egg mixture over casserole.

Shred Dubliner Cheese over egg mixture until it’s thoroughly covered in cheese.

Bake for 25 minutes, or until knife inserted into the middle comes out clean.
